Now I want to talk about Kombucha. Which is obviously completely unrelated to these Banana Oatmeal Cookies, but I understand you won't mind.

Allow me to start by saying that my husband drinks apple cider vinegar mixed with warm water every morning to reduce inflammation or anything like that.

He claims it is magical. I claim it is nasty.

While I know this is going to seem spectacular (because it is)I actually dry heave at the sight and odor of his early ritual to a daily basis. He loves that about me personally.

Based upon this response, an individual would think that I would stay far away from Kombucha, correct? I mean, after all, it surely has a vinegary tang.

But for some reason, I keep trying it. I Need to like it SO DANG BAD.

They have the perfect amount of banana flavor and a lovely chewy texture thanks to the oats. The chocolate chips are only an additional bonus.

I like these cookies a little on the side, therefore that I bake them for 9 or 10 seconds. If you want these to be cooked through, I would take for 10-11 minutes.

1/2 cup unsalted butterat room temperature

1 cup packed light brown sugar

1 large egg

3/4 cup mashed ripe bananas (about 2 medium)

1 1/2 tsp pure vanilla extract

1 cup all-purpose flour

1 teaspoon baking soda

1 tsp salt

2 tsp ground cinnamon

3 1/4 cup old fashioned oats


In the bowl of a stand mixer fitted with the paddle attachment, or in a big bowl with an electric mixer, beat the sugar and butter till light and fluffy, about 3 minutes.

Scrape the sides of the bowl and mix in the egg until completely incorporated. Scrape down the sides of the bowl and add in the skillet and vanilla.

Gradually add the the flour mixture to the banana mixture and mix until just blended.

Scrape down the sides of the bowl and stir to recombine.

Use a moderate cookie scoop (about 1.5 tablespoons) to scoop the dough onto prepared cookie sheets leaving about 2 inches between each cookie.

Bake in preheated oven for 9-11 minutes.

Remove cookies from the oven and lightly press on the tops of each cookie with the base of a drinking glass. Because these cookies don't spread considerably, this can give them a conventional cookie shape.
